Freezer Cooking Success (2 Dozen Burritos!)

One of the areas I really struggle with is having enough quick snacks and lunches on hand. Sure, sandwiches and salads can be put together in 10 minutes, but sometimes that’s too much effort (just being real here!). My solution? Freezer cooking. I can’t begin to tell you what a lifesaver it is to have healthy, homemade food ready in the freezer. Instead of having to scramble for drive-thru burgers or overpriced Chinese takeout, food is available at a moment’s notice.

Since everyone in my family loves Mexican and burritos freeze beautifully, I bulk-bought ingredients and spent some time making up a bunch for the future. Burritos are so simple and versatile. If eaten fresh, I add veggies, salsa, guacamole, etc. If freezing, I only use rice, beans, cheese, and hot sauce.

Due to multiple distractions (phone calls, UPS at the door, rambunctious cat that kept jumping on the counter), it took longer than I expected, but the end result was 2 dozen delicious burritos—individually wrapped in foiled, tucked inside ziplocs, and neatly stacked on the freezer shelf.

I’m so pleased that there will be a nice Shabbat lunch tomorrow and yours truly will actually get to enjoy/experience a day of rest. Everything flows smoother when I plan ahead; I really need to do this regularly…

Here’s an unusual freebie: Hockey for kids!

This Saturday, February 20th, USA Hockey and 300 local associations across the country will host Try Hockey For Free Day. Participating locations are encouraging kids, ages 4 to 9, to join in the fun. All locations will have limited equipment available for use.

Hockey is HUGELY popular here in New England, but many kids aren’t able to play due to the high cost of equipment and rink rental. This is a great way to try it for free if your little one is interested.

My Review of “Breaking Busy”

“If it doesn’t add to your life, it doesn’t belong in your life.” That engaging quote, along with many others and a treasure trove of helpful advice are included in Alli Worthington’s new book Breaking Busy: How to Find Peace and Purpose in a World of Crazy.

Most women I know—me, definitely—struggle with having way too much to do and a lack of time/energy to get everything done. As a busy blogger/entrepreneur and mom of 5, Alli relates. In a book that’s part memoir, part self-help, she relays her own experiences of becoming extremely burnt out and how she was able to turn things around.

Each chapter of Breaking Busy deals with topics that are relevant to most of our hectic lives:

  • Capacity
  • Relationships
  • Calling
  • Editing
  • Traditions
  • Time
  • Thoughts
  • Decisions
  • Communication
  • Worth

Out of a sense of guilt, obligation, and often shame, most of us take on commitments we don’t even want, trying to be all things to all people and losing our sense of peace/purpose in the process. That is not living our best lives in any possible way! Implementing some of her ideas like a Time Diary and a Stop-Do List can help cut down on the uncertainty.

I think this book will truly benefit married mothers who can lean on family and have a built-in support system. Because of her background, the author doesn’t have much practical advice to offer singles or those who must be crazy-busy just to survive. The whole “focus on your passions only” bit is for those have that luxury. She has a stay-at-home husband and household help which affords her opportunities most women can’t even dream of.

While none of her advice is anything we haven’t heard before, it’s laid out in an easy to understand way that’s also encouraging which makes for an enjoyable and productive read.
