Why I Don’t Post Deal Match-Up

Rikki emailed me the following question:

“Why don’t you post deal matches if you like to extreme coupon? I want some of the stuff you show in Super Savings Saturday.”

That’s a great question and I have a simple answer: I don’t do deal match-up because so many other sites are already doing it! Before couponing exploded on the internet, yes, I did do my own matching, but not now and I want to be honest about that.

Could I spend hours every week compiling and posting matches? Sure, but seriously folks, why re-invent the wheel? While I love to coupon and feature good deals, it’s just one part of my life. TJL is a lifestyle site and I try not to focus exclusively on any single category. Hopefully, that clears it up for anyone wondering!

Super Savings Saturday – 9/19/15

Welcome to another edition of Super Savings Saturday!

This week was all about the eggs. Ever since the shortage happened and egg prices have doubled—and tripled in some cases!—I have been able to find them reduced for quick sale because they “expired” the next day (eggs are good much longer than that date, so don’t be afraid to stock up).

Because bread was also on sale, we ended up having egg salad sandwiches for lunch 3 days in a row. I had to readjust the menu plan, but it’s worth it when good deals pop up unexpectedly.

Shaws:

4 dozen cage free organic eggs, reduced price $0.99. Total: $3.96! (Since one dozen is normally $3.99, I was really excited to buy 4 for less than that. Taste/texture wise, these eggs were excellent.)

2 Arnold Oatnut breads, BOGO price $4.49. I used a $1.00 manufacturer’s coupon. Total: $1.75 each!

Broccoli, on sale $0.99/lb. Total: $1.93.

Everyday Essential old fashioned oats, clearance price $1.50. (It’s hard to tell from the picture, but this was discounted because the canister is crushed. Nothing wrong with the contents and it doesn’t expire until 2017.)

Hannaford:

2 Lindsey Natural olives, regular price $4.19. I used 2 free product coupons. Total: Free!  (I’m the only one that will eat Kalamata olives around here, so I’m planning on making a lot of yummy Greek salads.

Rite Aid:

GE light bulb twin pack, on sale $7.99. I used a $1.00 manufacturer’s coupon and 699 Plenti Points. Total: Free, plus 799 Plenti Points. (I love getting moneymakers on necessary household items that I’d have to buy anyway.)

Target:

I intended to buy kids clothes and shoes, using a 30% cartwheel offer. After spending 40 minutes browsing, I just couldn’t find anything worth buying since it excluded clearance. While I HATE leaving a store empty-handed, it’s much more important to only make sound purchases and not waste money.

Summertime Strawberry Shortcake

One of my favorite things about summer is the abundance of fresh berries. I’ve made this incredible dessert numerous times in the past few months, but I kept forgetting to blog about it (since summer is almost over it was now or never!). As you can tell from the title, this is a seasonal cake. Technically it can be made year-round with frozen fruit, but I only make it when fresh is available since the taste/texture is so much better.

I also prefer a homemade base instead of store bought angel food cake or biscuits like some recipes use. My version might seem a little fussy because separated eggs are needed; don’t let that deter you. The cake comes together easily.

To make Summertime Strawberry Shortcake, you will need:

*  1 cup flour (can be all-purpose or whole wheat)
*  3/4 cup white sugar, divided
*  4 large eggs, separated
*  1/3 cup water
*  1/4 cup oil
*  1 1/2 TSP baking powder
*  1 TSP vanilla extract
*  2 cups strawberries, sliced 
*  1 cup whipping cream
*  1 TBS sugar

Cake instructions:

In a large bowl, beat egg whites until soft peaks form. Continue beating at high speed and add 1/4 cup sugar, a few spoons at a time. Beat well after each addition, until sugar is completely dissolved and egg whites stand stiff.

In another mixing bowl, beat the egg yolks, flour, water, oil, baking powder, vanilla, and 1/2 cup of sugar, then gently fold the flour mixture into the beaten egg whites until completely blended. Pour batter into two 8-inch round cake pans.

Bake at 325 degrees for approximately 40 minutes. Remove from oven and allow to cool completely before removing from pan.

Topping instructions:

Beat whipping cream in a chilled bowl on high until soft peaks form. Add a tablespoon of sugar and continue beating until cream is stiff. Spread the whipped cream over the bottom cake. Top with other cake, then add more cream and the sliced strawberries.

Strawberry shortcake is best served fresh, and any leftovers need to be refrigerated. Figure on 8 small servings or 4 large, depending on your family’s appetite (We’re big eaters and leftovers, especially sweets, are never an issue in my kitchen.) I like to eat my shortcake plain, but anyone who prefers to kick it up a notch may enjoy a New England touch: lightly drizzle maple syrup on top!
