Tuna and White Bean Salad

This recipe for Tuna and White Bean Salad has been on my “Must Make” list for ages. Truthfully, I kept putting it off and putting it off, until Sunday, when I got a great deal on green onions (final sale price $0.08 a bunch with a Snap rebate and still available!)

Because I never have that type of onions on hand and I hate buying a special ingredient for one specific meal, I had resisted until now. After making/eating this, I am SO glad I did. It’s super fast to prepare, requires no stove/oven, and fits with my current kick of No Cook Summer Suppers.

To make Tuna and White Bean Salad, you will need:

  • 2 can of solid white tuna in water
  • 1 can of cannellini beans
  • 1 bunch of green onions, chopped coarsely
  • 3 TBS olive oil
  •  Juice of a lemon
  • 1 clove garlic, chopped
  • 1 TSP basil 
  • Salt/pepper to taste

Start by chopping the green onions and set those aside. Drain all 3 can very well. Empty tuna into a large bowl and break up into chunks, then add beans and stir gently. Add the lemon juice, garlic, oil, basil, and salt/pepper. Mix until combined. Chill for at least an hour. When ready to eat, plate, then garnish with the chopped green onions.

I served the salad plain, but it can easily be bulked up with cherry tomatoes, cucumbers, and/or olives. It’s also very nice when served over a bed of spring mix or baby spinach.

 

A Vegan Protein Powder I Love

As a self-proclaimed smoothie addict, I’m always looking for protein powders without chemicals, fillers, and artificial ingredients. ALOHA has a new and improved version that’s awesome.

Super Savings Saturday – 8/22/15

Welcome to another edition of Super Savings Saturday!

This week was all about breakfast food—cereal and cereal bars. I don’t like either, but the rest of the family does. By combining coupons, rebates, and sales, I was able to stock up for very little.

Otherwise it’s a s-l-o-w time for deals. Rite Aid & Walgreens weren’t interesting and I struck out at CVS. But that was nothing compared to a hellish trip to Walmart!

Shaws:

I finally downloaded the MyMixx app from Shaws, which features digital coupons and a weekly freebie (the Fiber One cookies).

3 Kellogg’s Nutri Grain, on sale Buy 2 Get 1 free. I used 2 $0.75 manufacturer’s coupons, stacked with a $1.00 Checkout 51 rebate. Total: $0.79 each!

2 Honey Nut Cheerios Medley Crunch, on sale $2.00 each. I used 2 $0.50 manufacturer’s coupons. Total: $1.00 each!

2 Star Wars cereal, on sale $2.00 each. I used 2 $0.75 manufacturer’s coupons. Total: $0.50 each!

CVS:

My goal was to find the free after ECB Propel water. I left with only a rain check.

Target:

I made a super quick trip to pick up two prescriptions and some cheap paper towels.

4 Bounty Basic Paper Towels, $0.97. I used a $0.50 manufacturer’s coupon, stacked with a 10% off Cartwheel offer. Total: $0.38 each! 

The medicine, if anyone is curious, was $10.00 each. I try to always buy generic if possible because name brand prescriptions are ridiculously expensive!

Walmart:

As usual, shopping at Walmart is a nightmare. I wanted to price match some dry goods from a few different stores, thinking I’d save time/money with one quick stop. (Ok, stop laughing!) After waiting in line for 15 minutes, I then had to deal with a very inexperienced cashier that couldn’t work the register. Another 5 minutes waiting for a manager. Then another 5. At that point I was so tired and frustrated—it was 10:00 pm—I left everything there and went home!

Imagine: it takes less time to shop at 3 grocery stores than it does at Walmart!

Why I’m Praying for Anna Duggar

The Josh Duggar scandal just keeps growing. First, came the shocking admission of child molestation, and now he’s been caught cheating on wife Anna with multiple women he met thru Ashley Madison.

His simplistic explanation: “I’ve been the biggest hypocrite ever.” 

OBVIOUSLY! While pretending to be holier than thou in front of the camera, in private he was committing criminal acts (molesting his own sisters) and immoral acts (adultery).

I find it sickening when so-called religious people use their power and position to hurt and deceive others. True people of faith don’t judge, don’t shame, don’t lie, and don’t cheat. 

Nobody is perfect; because all humans make mistakes, sometimes these things do happen and when they do, the proper response is to atone and stop the behavior.

Josh Duggar has behaved improperly for more than a decade, which proves he’s not sorry.

This is no different than the lies perpetuated by Ted Haggard, Rabbi Freundel, and numerous other scammers who cloak themselves in righteousness while doing evil in God’s name.

Josh may portray himself as a victim, claiming his privacy was violated, but what about the real victims—his wife and 4 children. They haven’t done anything wrong and are paying dearly for his sins.

Anna Duggar is in a terrible position. She has little education, no freedom, no money of her own, and probably no self esteem. She has been taught that women have no value outside of being human birthing machines—common in the Duggars’ ultra-conservative Christian faith. She is isolated and without a voice.

To me, that’s just slavery by another name.

Anna, like every other woman, deserves better. She deserves to make her own decisions, enjoy her own life, and know that she and her children are safe from harm. While I don’t normally advocate divorce, I think in this case, it is definitely acceptable. She needs to step away from Josh and the pseudo-cult lifestyle. 

Religion and faith can be wonderful things, provided they’re not twisted and used as a weapon. They’re meant to enhance our lives, not cripple us with unattainable expectations. I can only pray that Anna Duggar will realize that one day…
