Raspberry Streusel Muffins

Living in New England, summer time is always about fresh berries. They’re featured in every grocery store, roadside stand, Farmer’s Market and most U-Pick farms. Whenever I spot a deal, I make a point to stock up. Imagine my delight when I found pints of raspberries for only $0.89 each at a local produce store yesterday. I froze 10 pints and used the remainder for these delicious muffins.

To make Raspberry Streusel Muffins, you will need:

2 large eggs
1 cup granulated sugar
1/2 cup vegetable oil
1 tsp almond extract
2 cups flour  (Any will do, but white makes them more cake-like)
1 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 cup sour cream, room temperature
1 cup raspberries

Plus, these for the streusel topping:

1/3 cup brown sugar, packed
1/4 cup flour
2 tbs butter, melted

Streusel Topping: Combine brown sugar, flour and butter with a fork until crumbly; set aside.

Muffins: Beat eggs in large bowl with electric mixer; gradually add sugar. With mixer running pour in vegetable oil and almond extract, blending until smooth. In separate bowl whisk together flour, baking powder, salt, and baking soda. Add flour mixture to egg mixture, alternating with the sour cream; blend until smooth. Set aside.

Spoon one generous tablespoon batter into bottom of muffin tins. Divide half of raspberries equally among muffin cups. Divide remaining batter among muffin cups. Top with remaining equally-divided raspberries. Sprinkle each muffin with streusel topping.

Bake at 375 for 20 to 25 minutes. Let stand for 5 minutes in tins on cooling rack. Remove from tins to rack to cool completely.

These are wonderful for breakfast, snacks, or as a lunch box surprise. Extras freeze beautifully, but we never seem to have any leftovers here when sweets are involved!

Welcome to another edition of Super Savings Saturday!

This week had a little something for everyone: free treats for the dogs, junky breakfast food for my guy, and snacks/paper products for me. I shopped 3 stores and managed to find lots of freebies and cheapies! I was glad to find at least one of the drugstores had something I wanted; lately, the deals have been terrible!

CVS:

Just the Basics paper plates, on sale $3.69. I used a $3.00 off any $3.00 or more store coupon. Total: $0.69!

Just the Basics paper towels, on sale $0.99 with a $0.25 store coupon. Total: $0.74!

2 Mini pistachios, regular price $1.00. I used a 2/$2.00 store coupon. Total: Free!

I was hoping to use last week’s rain check for Ronzoni pasta. That wasn’t in stock yet, but I found many other enticing items.

Package of green peppers, marked down to $0.89!

Package of mini Yukon gold potatoes, marked down to $0.99!

2 Fruit loops, on sale $1.00 each. Total: $2.00, plus $1.00 Checkout 51 rebate!

2 Pop tarts, on sale $1.00 each. Total: $2.00, plus $1.00 Checkout 51 rebate!

The veggies had some slight blemishes, but once everything was chopped, it was fine. The cereal and tarts are usually $3.49 each, so this was huge savings (I’m fully aware that stuff is terrible, but my guy is a confirmed sugar addict and will buy it anyway).

I printed coupons to buy discounted movies, but my store was cleaned out! I’m saving them for next time, along with Bounty paper towels and Dr. Pepper cartwheel deals.

Look around yourself. Are there plenty of old clothes or other things that you do not use for any occasion? If so, a clean out is in order. All of these items cost money and aren’t making any by hanging around! Whether by donating to charity, or by holding a garage sale eliminating unused items is crucial.
  

2. Being sentimental  
  

By holding on to unused items simply because they have sentimental value, you miss the unique chance to get some extra money for them. There is no point in keeping such old stuff, you don’t want, wear, or even like. Go through every item and estimate its worth. 
   
  
3. You can’t find recent purchases
  
Who among us hasn’t bought something then misplaced it in an over-stuffed drawer or closet? This mistake is too common and costly! The moment you start resorting to duplicate purchases, because a recent purchase has been lost, clutter has taken over.
  
Clutter accumulates over time and it won’t be gone overnight either. But once you realize how badly it hurts your finances, you can take the right measures and focus on removing of all the unnecessary items .
