“Bagel And Lox” Pasta

When I recently saw a recipe in Parade magazine for “Bagel and Lox” pasta, I just had to try it! This is my tweaked version, perfect for a light dairy dinner or brunch!

Start by melting 1 Tbsp of butter or Smart Balance in a pan. Add 2 small onions and 2 cloves of garlic. Cook about 5 minutes until translucent. Lower the heat and add 1 cup of plain yogurt and a 1/4 cup of cream cheese. Stir until melted and combined—don’t boil! Take it off the heat and add 1/2 to 1 Lb of smoked salmon (I used 1/2 Lb). Add to a box of cooked pasta (any will do, I used gemelli). Toss, add salt/pepper to taste, fresh parsley, and an optional squirt of lemon juice.

Delish!

My Smart Car Obsession

Who out there shares my obsession? I’ve loved this awesome “Goldbunny” Smart Car since I saw it in the Lindt chocolate store parking lot. Many out there, but how many can boast wings?!

If I ever buy one, I’d paint it pink and purple with butterflies, get a vanity plate that reads “COUPON,” and rock out!

My Pet, My Pal

Can you imagine living in a world without pets? I sure can’t! Since 2002, I’ve enjoyed caring for this orange cat. His name is Pumpkin. No matter what’s going on in my life, he’s always there to cheer me up, make me laugh, and give me a “high paw.”

Pumpkin originally came to me via my sister in Florida. He was supposed to visit for only 2 weeks. 12 years later, we’re still together. Hopefully, we’ll be together another 12 more. He’s not only my pet, he’s my pal.

Super Savings Saturday – 1/25

Brrr! It sure is cold here in New England this week. Regardless, no bad weather can keep this couponer at home!

I started the day by cashing a Staples rebate check for $3.50 (last month’s deal on free printer paper). I love to use rebate money for groceries that don’t have regular coupons, like produce.

I bought 8 grapefruit at 4 for $1.00, red grapes at $0.99/Lb, 3 lemons for $1.00, and zucchini at $0.89/lb. Total: $5.76

CVS: 6 Speedstick deodorants, on sale $1.99 each. I used 3 Buy One, Get One Free coupons. My total was $5.97 and I earned $6ECB (Extra Care Bucks – CVS store dollars).

Target: Remember the Target coupons I featured here? They worked like a charm!

Colgate toothbrush, regular price $1.02, used a $1 Target  Mobile coupon, total $0.02!

Mushrooms, regular price $1.77  used a $1 Target  Mobile coupon, total $0.77! Total amount: $0.79!
