Monday is Bulk Cooking Day

Like to cook? Please join me on Monday, 2/2, for a bulk cooking day. While I plan to make a bunch of goodies, there are no requirements other than cooking at least one item anytime during that day.

My tentative list includes:

*  Baked chicken with potatoes

*  Baked brown rice

*  Chocolate pumpkin muffins

*  Spiced chickpeas

*  Meal prep for the week  (washing/chopping all the veggies and fruits and finishing touches for the meal plan)

Most of these items I already have on hand, but I’m grocery shopping tomorrow for a few odds and ends. I find bulk cooking days go smoothly when I’m well-stocked, with a detailed list, and plenty of quiet time in the kitchen.

My Experience with Edible Gifts Plus

Which do you like better, cookies or brownies? It’s impossible to choose, right? Thanks to the amazing folks at Edible Gifts Plus, we don’t have to! 

Edible Gifts Plus is a family owned business, based in south Carolina. They are known for offering the freshest and tastiest treats for every occasion. With an enormous selection of sweet and savory gifts, there is literally something for everyone. 

When they generously offered me the chance to sample the Cookie and Sprite Combo, I jumped at the chance! It arrived in a classic gift box, wrapped with a signature purple gift band. (I find that beautiful packaging only helps to enhance a gift.) Nestled inside were 6 Fairytale cookies and 12 Brownie Sprites. Each item is individually wrapped to maximize taste and freshness.

The cookies come in the following flavors: Caramel Pecan, Coconut Walnut, Double Chocolate, Mint Chocolate, Peanut Butter and Toffee Chocolate Chip. While each one is delicious, my personal favorite is the Caramel Pecan (Must be something about the sweet and crunchy combo that’s wonderful). Naturally, I had to have milk on the side to dunk. Yum!

The cookies had an excellent texture, not too hard or soft. Some packaged cookies can be disappointing, but not the ones from Edible Gifts Plus. Every morsel is pure perfection.

The Brownie Sprites come in the following flavors: Original, Caramel, Chocolate Chip, Cream Cheese, Espresso, Mint, Chocolate, Peanut Butter, Pecan, Raspberry Swirl, Toffee Crunch, Walnut and White Chocolate.

Can a single word describe how truly delicious these brownies are? Yes, if the word is “Spectacular!” Soft, yet slightly chewy, moist, and bursting with flavor, I adore these brownies.

After sampling 3 cookies and 4 brownies, I had to stop myself from inhaling the entire box in one sitting. (Thankfully, these treats can be eaten fresh for up to a week, or frozen for later without compromising quality.)

The Cookie and Sprite Combo would make an excellent gift for birthdays, anniversaries, and holidays. I’m happy to report they’re certified Kosher, so everyone in the Jewish Community can enjoy them! (Talk about a great idea for Purim or Rosh Hashanah.) Additional Kosher gifts are offered for every Jewish event, including Passover.

If you’re looking for a delicious gift at a reasonable price, Edible Gifts Plus is simply the best.

BBQ Chicken Sliders

Need a surefire dinner for hectic nights? This recipe for BBQ Chicken Sliders is perfect! It’s quicker than takeout and tastes much better. Only 3 ingredients are needed: chopped chicken, BBQ sauce, and mini buns. I love to make it ahead and keep it in the fridge for times when I’m so frazzled and fried, cooking is simply not an option!

Starting with pre-cooked chicken helps the sliders come together easily. (I bulk cook, shred into strips, and separate into meal-sized portions.) If you don’t have anything on hand, use a store-bought rotisserie.

BBQ Chicken Sliders are so foolproof, a detailed recipe isn’t needed. Just combine 2-3 pieces of chicken with enough sauce to coat, then stuff into a dozen mini buns. If you want to get fancy, add some coleslaw on top. (I didn’t have any, so I skipped it, but it’s great either way.)

I prefer plain buns, but I know a lot of people that are crazy about King’s Hawaiian brand. If you like a sweeter taste, try those. Otherwise, any old bun will do.

With adequate sides, that should be enough for the whole family. Sweet potatoes, cucumber spears, and chips make a perfect combination. Kids seem to really love anything mini, so if you have picky eaters, I’d try this.
