*Hot Deal Alert* $0.10 Oranges!

a4

Finding deals on whole, healthy foods can be a challenge, so I was excited to snag cheap oranges at Walmart.

Buy an orange, regular price $0.35. Submit for a $0.25 rebate. Total: $0.10!

Walmart is different than most stores, because they price fruit individually (most stores do it by the pound). This rebate can be used at any store, but the price may be slightly higher.

Don’t like oranges? Last week’s deal for free bananas is still available!

Turkey Tacos

a4

Anyone else dealing with a fridge full of leftover turkey? While I love a good Pilgrim Sandwich, it’s nice to move beyond the usual after-Thanksgiving meals. This recipe for Turkey Tacos is a welcome change of pace! The ingredient list is short and sweet, plus they can be assembled in a flash. My recipe eliminates the cheese and sour cream found in most Mexican recipes, so it’s suitable for the Jewish kitchen.

To make Turkey Tacos, you will need:

  • 2 Cups leftover turkey, shredded.   (White, Dark, or a mix of meat can be used.)
  • 1 Jar salsa   (Medium is my fav.)
  • 1 Cup corn   (I used frozen.)
  • 1 Cup cherry tomatoes, halved
  • 2 Avocados, diced
  • 2 Tbs. taco seasoning mix
  • 1/2 Cup water
  • Juice of a lime
  • 1 Tbs. chili flakes
  • Salt/Pepper to taste
  • 1 Box taco shells  (I used hard shells since I had those on hand. Soft shells would also be great.)

In a medium bowl, mix the avocado, corn, tomatoes, lime juice, salt/pepper, and chili flakes. Set aside. Warm the cooked turkey, taco seasoning and water until heated in a skillet, stirring occasionally. When the turkey mixture is done, add it to the mixing bowl and spoon into taco shells (shells can be warmed in the oven if you wish. I was feeling lazy and didn’t). Top with salsa.

In my experience, a small family easily split a box of tacos, so if you’re feeding a big crowd, I suggest doubling the recipe. Turkey Tacos can be paired with a chopped salad and Mexican rice for a complete meal.

A Taste Of Thanksgiving – World’s Greatest Cranberry Sauce

a3

It’s time for another Taste of Thanksgiving!

This recipe is called World’s Greatest Cranberry Sauce and it truly lives up to its name. For those of you who’ve only eaten the horrid slime from a can, and don’t think you like cranberry sauce, try this! You will be pleasantly surprised, like Hungry Bear was during our first shared Thanksgiving. Having been accustomed to the commercial variety, he thought cranberries were “disgusting and nasty.” After much coaxing, he sampled mine and has been a cranberry lover ever since.

Though this is called a sauce, it’s actually more like a relish, since it has chunky fruit and spices. To make World’s Greatest Cranberry Sauce, you will need:

*  1 Bag fresh cranberries, 12 oz.  (I bought Ocean Spray for only $0.24!)

*  1 Cup water

*  1.5 Cups Sugar or Splenda

*  1/2 of a fresh pineapple, diced

*  1 Orange, cut into segments

*  1/4 Tsp. cinnamon

*  1/4 Tsp. ground cloves

Rinse cranberries and look over, removing any bad ones. In a medium pot, bring water and sugar to a boil. Turn the heat down, then add the cranberries, cinnamon and cloves. Simmer until the berries begin to pop, stirring frequently. Total cook time will be approximately 15 minutes. Remove from the heat and add the pineapple and orange. Stir to blend. Cool to room temperature, then refrigerate until ready to serve.

World’s Greatest Cranberry sauce can be made 2-3 days ahead, or frozen. (I prefer to stagger my cooking for Thanksgiving, so it’s not an all-day marathon.) This recipe makes 2 pints, which should be enough for most families. If you need more, simply double it. For those that have small families and end up with leftovers, cranberry sauce can be combined with shredded turkey for a very yummy dinner.
