World’s Easiest Homemade Granola

Homemade granola is one of the easiest recipes to make, and it’s surprisingly versatile, too! It can be eaten hot, cold, sprinkled over yogurt, or eaten by the handful as a snack. I like to start with a simple base of wholesome ingredients. Only 5 are used and this can be prepared extremely fast (short cooking time and prep). Most granolas use a combination of honey and brown sugar, but this Yankee loves her maple syrup!

To make World’s Easiest Homemade Granola, you will need:

* 7 Cups oats  (Old-fashioned oats work best, but quick cook can be used.)

* 1/2 Cup vegetable oil

* 1 Cup maple syrup

* 1 Tsp. vanilla

* 1 Tsp. cinnamon

Place the oats in a large mixing bowl and set aside. In a small saucepan, mix the oil and maple syrup. Stir in cinnamon and vanilla. Bring to a low boil, then remove from heat. Pour the liquid mixture over the oats and stir well to combine. Spread into a 9X13 Pyrex. Bake at 375° for 10 minutes. Remove from oven and stir. Turn the oven off and return. Leave in the unheated oven overnight. When the granola is completely cool, break into chunks.

If you want to jazz up the basic recipe, try any of these additions:

* Sliced almonds

* Sunflower seeds

* Raisins

* Dried apricots

* Dried cranberries

* Dried blueberries

* Coconut

* Flaxseed

* Chocolate chips

* Sesame seeds

Unless you have a large family, there will be leftovers from this big batch. Extras can be stored in an air-tight container for about a week, or frozen for a few months. Great for a quick breakfast!

Least Romantic Hanukkah Gifts

As Hanukkah winds down, I thought it would be fun to discuss gifts. Around here, it’s pretty low key. Growing up, I never received a bunch of gifts, and as an adult I’ve never gone overboard either. Gift #1 – Air purifier

Since I suffer from mild allergies and asthma, this was a very practical idea, but none too exciting. I slept with it the first night, only to wake up with a sore throat. Evidently, the Ion feature can have this effect. I used it twice more without any relief. It’s now back in the box and will be returned shortly. So much for that…

Gift # 2 – Mini flashlight & tactical knife set

I thought the air purifier was bad until I received my second gift! This one truly was a head-scratcher, because I’ve never expressed a desire for something remotely like it. When I asked Hungry Bear what possessed him to buy it, he replied: “In case you ever drive off a bridge, into a river, you can break the windshield and survive!” I almost died laughing! This gift is still in the package, in my glove box, and will probably remain there indefinitely.

Instead of the roses, chocolates, and jewelry I was hoping for, I ended up with the least romantic Hanukkah gifts ever. I guess it’s just the age-old difference between men and women. He may not be a very lovey-dovey guy, but at least he tries, and for that, I’m grateful.
