10 No-Bake Passover Desserts

Cooking for Passover can feel like a marathon event. To simplify the Seder, I love incorporating quick desserts—especially ones that don’t need to be cooked! Here are 10 No-Bake Passover desserts that I love:

1. Macaroons

Yep, the old stand-by. Coconut + chocolate = perfection (plus, it really wouldn’t be Passover without them, right?).

2. Homemade Ice Cream & Sorbet

Since an ice cream maker can be found on sale for only $25.00, it’s an affordable investment—even if it’s only used once a year. I love to make berry flavors in mine. 

3. Fruit Salad

Healthy, colorful, and quick…not to mention tasty! I love to make a huge bowl with at least 5 different fruits like grapes, kiwi, pineapple, strawberries or blueberries, and cantaloupe.

4. Boston Fruit Slices

Growing up in New England, we had these every single year. We always bought the assorted variety, but when making from scratch, it’s easier to pick a single flavor. I love these because they resemble mini watermelons.

5. Apricot Candy

Making candy on the stovetop can be tricky since it’s temperature sensitive. My version require no heating. Simply puree 1 lb of dried apricots in a food processor, add sugar to taste, then roll into balls and let harden overnight.

6. Meringues

Along with macaroons, these are found at most every Seder table. Comprised of egg whites and sugar, these make a nice, crunchy little cookie. I love adding a few drops of food coloring for a special effect. Doesn’t pink make these look like little flowers?

7. Matzo Layer Cake

Cooking on the Side has an incredible recipe for a cake made of matzo. The 9-layer version looks and tastes amazing. Try the 18-layer if you’re extra ambitious.

8. Nut Clusters

Melt caramel, add your favorite nuts (I use pecans), then scoop by the tablespoon onto a baking sheet. Chill in the fridge overnight.

9. Avocado Pudding

A pudding made from avocado? Sounds weird, tastes awesome! Mix mashed avocado with cocoa powder and honey by hand or puree in a food processor for a creamier texture. Shredded coconut, raspberries, or chocolate chips can be mixed in right before serving.

10. Chocolate Covered Strawberries

Wash/dry, dip, chill. Does it get any simpler? A single dip in milk chocolate is sufficient, but if you have extra time, try making tuxedo style.

Super Savings Saturday – 4/16/16

Welcome to another edition of Super Savings Saturday! This week, I found great deals on pet food, makeup, and sweetener. I wanted to get a jump start on Passover food shopping, but that didn’t actually happen (such is life).

Petco:

4 Wellness Trufood cat food bags, clearance price $11.98. Total: $47.92. (Since these bags are normally $48.99 each, this deal was amazing! No wonder it was marked down; that price is absurd!)

Target:

2 Madhava agave, clearance price $2.48. I used a $1.00 manufacturer’s coupon stacked with a $1.00 Target coupon. Total: $0.48 each! (Very yummy and organic as well!)

There were many other things on my list, mostly Cartwheel offers, but I shopped too late in the week and everything was gone. Grrr!

Rite Aid:

5 Revlon ColorBurst Lip butters, clearance price $1.99. Total: $9.95! (I had no coupons, but it didn’t even matter since these were so cheap. I bought a bunch of different colors for me and my sister to share.)

2 Almay Softies eye shadows, regular price $5.29 plus BOGO. I used 2 $4.00 manufacturer’s coupons. Total: $0.65 each!

Another item I really wanted were Arm & Hammer Spinbrushes, on sale for $1.99 with $2.00 peelies on the box. I checked 3 stores in my area and none had coupons.

CVS:

Don’t ask me how, but I went to CVS without my coupon folder and shopping list. Since I didn’t remember the deals and I wasn’t going to pay full price anyway, I left empty handed.

An anti-Israel hate mob took over San Francisco State University last week while the Mayor of Jerusalem was speaking. Using megaphones, they were so loud and vicious that the event had to be canceled. Police reportedly stood by and did nothing to silence the bigots.

Troubling behavior like this is not uncommon on college campuses around the world. Those of us who find it outrageous—and everyone should!—can make our voices heard by signing a petition created by The Israel Project. When the petition reaches 20,000 signatures, TIP will present a copy to California Governor Jerry Brown.

Let’s do our part to encourage free speech and discourage discrimination in every public place.
