ModCloth: Spring Travel Style

After a long, cold winter, March is finally here, signaling the arrival of spring. Springtime brings out our whimsical wanderlust and daydreams of exploring, whether it’s around the globe or in our own backyards. ModCloth’s latest collection pays homage to the romance of road trips and exciting adventures in free-spirited details and seasonal hues.

When I plan for a road trip, I like to include a comfy travel outfit like a flowy skirt and loose top combo.

“3 Thing” Dinners

Sometimes it seems like my whole life revolves around food. Between the shopping, planning, cooking, and cleaning up, I’m in the kitchen non-stop. Don’t get me wrong, I love to cook and try new recipes and I don’t mind making an effort, but it can be a grind, day after day.

If I want to have time for other activities—and I do!—I can’t spend 4 hours on an elaborate feast. Dinner needs to be quick (no more than an hour), healthy, and homemade if possible. By keeping the kitchen well stocked, being organized, and focusing on simple meals, I can accomplish my goal.

Simple to me is a meal that consists of 3 things or less. I don’t include dessert in there, because I’m limiting sweets and serving dessert only on the weekend, if at all. Some examples of how I use the “3 things” rule:

  • Meat, starch, and vegetables
  • Main dish, vegetable, and fruit
  • Soup, bread, and salad
  • Sandwich, veggies, and fruit

My go-to meat dishes are baked chicken or fish, steak/meatballs/burgers, or a whole roast made in the crock-pot. Whole roasted chickens are also easy.

For a starch, I like to serve rice, potatoes, or pasta. On my most frazzled nights, I will simply serve slices of bread with butter and call it good-enough!

Veggies can be fresh or frozen, depending on the sales and what’s in my kitchen. If I’m turning on the oven, I try to roast a veggie. Fruit is the same, whatever’s on sale or cheapies like apples, oranges, bananas. Salad is usually counted as the veggie instead of a separate course.

Getting beyond the basics may not be possible for most busy moms, but a “3 thing” dinner can be do-able (for most of us anyway).

I separated the deals into 2 transactions—one easy, one complicated. Both worked perfectly!

Transaction #1:

Kevita Probiotic drink, on sale $2.50. I used a $1.00 manufacturer’s coupon stacked with 35% off cartwheel. Total: $0.63. (Tasted horrible, so maybe a waste of money, but I do like to try new products.)

Transaction #2:

I had a $10.00/$40.00 store coupon that I used for all these items which made for an amazing deal.

1 Boiron Calendula cream, regular price $11.99. I used a $2.00 manufacturer’s coupon stacked with 40% off cartwheel. (Really nice to have on hand for cuts/scrapes.)

1 Organic Valley shake, regular price $13.99. I used a $3.50 manufacturer’s coupon stacked with 35% off cartwheel. (Tastier than the probiotic, but nothing special.)

1 Poise Impressa Bladder kit, sale price $2.99. I used a $2.00 manufacturer’s coupon stacked with 25% off cartwheel.

3 Playtex Sport Liners, regular price $3.99. I used 3 $3.00 manufacturer’s coupons. (Sending these to my sister in Florida.)

Total for everything: $15.53, plus a $10.00 gift card, making each item a steal! The Poise will be donated, everything else will be used and enjoyed.

Let’s Have Breakfast

What’s the best thing to do when you wake up in a bad mood? Have a nice breakfast, of course! I’m already on my 4th cup of tea and I had a little oatmeal earlier.

Folks, I am so anxious today, it’s unreal. Last night, yours truly rode home in a flat-bed tow truck with a guy named Fred. “Why” you ask? Because my normally reliable Pathfinder is broken! I should’ve known better than to go grocery shopping at 10:00 pm, in the rain, when I was already way too tired. I thought it would be quick and easy; oh, how wrong I was.

“Just grabbing a few items” turned into a major grocery stock-up. Unloading all the bags while getting soaking wet in the process was challenging enough; finding out that the car wouldn’t start nearly put me into a fit.

I will say this: Thank God for AAA! Within 15 minutes, help was on the scene. In the past, I’ve had to call them occasionally for a dead battery or a flat tire, but I’ve never, ever dealt with a hopelessly disabled car. I couldn’t figure it out, AAA couldn’t figure it out, so a tow to the mechanic’s garage was the only option.

I can’t even imagine what the estimate will be or how long I’ll be without wheels. There’s no way to change it, so I guess I shouldn’t be worrying about it. (Easier said than done.) Since I may be stuck at home for a few days, I’m making a list of chores/projects that have been on the back burner for a while. Maybe this will give me a good chance to catch up and slow down.

Hmmm…that doesn’t exactly cheer me up either.
