Ultimate Salad List

It’s day four of a 90-degree heat wave and I’m so annoyed/lethargic/grouchy, it’s unreal! When the weather is this hot and humid, I try to focus on No Cook Summer Suppers, because using the oven is unbearable. Sometimes that means it’s sandwiches, healthy snacks, and prepared food, but lately we’ve been eating a lot of salad, too.

Eating the same 3 ingredients over and over gets boring quickly, so I’m switching it up. Here is my Ultimate Salad List (basically anything you could ever want to put on a green salad):

Salad Vegetables:

lettuce/spinach/spring mix
shredded carrots
chopped onions (I prefer red or Vidalia if eaten raw.)
diced peppers
shredded purple cabbage
diced cucumbers
sliced radishes
sliced olives
diced tomatoes
fresh sprouts
diced avocados
green peas or broccoli

Protein Additions:

sliced steak
sliced chicken or turkey
bite-sized breaded chicken
diced hard-boiled eggs
canned tuna
taco-seasoned ground beef
chick peas
kidney, black beans, or white beans

Toppings:

cheese – cheddar, feta, etc
dried cranberries/blueberries
sunflower seeds
sliced nuts (Walnuts, almonds, pecans—I love ’em all!)
croutons

For the dressing, I’ve been using my stash of $0.38 Ken’s dressing that I bought on sale. If I didn’t have them, I’d make my favorite homemade dressing.

To save time, I recommend washing and chopping the veggies ahead of time. If you’re using meat, it can also be cooked and chopped ahead of time. Package the greens and meat separately and don’t add the dressing until right before eating.

Revenge of the “Bimbos”

Donald Trump may be hogging the limelight, but I find Carly Fiorina the most interesting of the Republican candidates. She recently made a comment about being called “a bimbo and worse,” which is something most women can relate to (I certainly do)!

Before I was a blogger, I used to work as a realtor. Socializing was a big part of the job and we were encouraged to attend numerous events. The most coveted invitation was to an extravagant annual party hosted by a star agent. All of his parties were infamous for having good looking women. Anyone who wasn’t invited felt like a loser and those who were invited and attended often experienced and/or witnessed inappropriate advances/attention/behavior.

Though many will deny it, I think this is the rule rather than the exception. A woman’s appearance often matters more than her intelligence, even in a professional setting. And the women who strive to be both pretty and smart are often ridiculed viciously.

On a daily basis, we are scrutinized in a way men never are. Everyone is so concerned with skirt length, heel height, “tasteful” jewelry, the “appropriate” shade of lipstick and other mind-boggling nonsense that has nothing to do with business ability.

Clearly being a CEO of Hewlett-Packard is a tough job and not something that can be accomplished by a “bimbo,” yet Carly Fiorina still has to convince many people that she’s competent. Instead of being a negative, she insists that being underestimated has worked for her rather than against, which is a great attitude to have!

Are there inequalities in the work place? YES! Should there be? NO! But life isn’t perfect and we have to do the best with what we’ve got. If you’ve ever been denigrated and patronized, it’s hard to suck it up and carry on. But we can’t allow others to marginalize our efforts. Maybe you’re currently stuck in a job without wage parity. Maybe you’re bombarded daily with snide, superficial remarks about being “just a girl.” Maybe you’re the most qualified but were passed over for a promotion.

Take heart: None of it is permanent. There is always another company, another job, another way. Carly started as a secretary and now she’s running for president. That sure sounds like revenge of the “bimbo” to me…

Super Savings Saturday – 8/15/15

Welcome to another edition of Super Savings Saturday!

This week was all about school supplies. There some amazing deals I went looking for at CVS and Walgreens, but most was sold out. I was planning to shop for a 3rd time today, but it was 89 degrees with a crazy thunder/lighting storm, so I passed. Due to the storm, I’m also not able to upload photos. I keep losing the connection, so I’m posting now and will try to add photos in later. Use your imagination until then!

CVS:

I made two trips on Sunday and Thursday. My store was out of the free Papermate pens, but I did find pencils.

3 pack of Papermate mechanical pencils, 5-ct, on sale $0.59 each. I used 3 $0.55 manufacturer’s coupons. Total: $0.04 each!

Butterfinger, on sale $0.99. I used a $0.75 in-store coupon. Total: $0.24!

Caliber pencil sharpener, regular price $1.99.  I used a $1.50 in-store coupon. Total: $0.49!

Diet Coke 2-Liter, on sale $0.99.  I used a $0.25 in-store coupon. Total: $0.74!

Shaws:

I found some unexpected goodies hiding on the reduced rack.

Baby Basic diapers, 36-ct, marked down to $2.99! (Never tried the brand before, but it’s worth the risk, since diapers are usually $8.99.)

2 boxes Equaline heart burn relief, 30-ct, marked down to $1.99. (Must have medicine for Hungry Bear. His acid reflux is so bad, he once woke up with acid in his nose! So, I was glad to find a super cheap generic version of Zantac.)

2 Everyday Essential butters, on sale $1.99. (Not an incredible price, but butter is always expensive, anyway. I needed it to make sugar cookies.)

Target:

I brought my CVS & Walgreens ads in to price match. Big surprise, there was nothing available. Talk about a wasted trip. I left the store empty handed.
