Beef & Veggie Skillet

After two recent recipe failures, I’m sticking to the tried and true. This recipe for Beef & Veggie Skillet is nearly foolproof! It requires only 3 main ingredients, cooks in a flash, and always tastes great. I usually have these items in my kitchen, so it doesn’t necessitate a special trip to the grocery store either (hate those!).

To make a Beef & Veggie Skillet, you will need:

*  1 8-oz container of mushrooms

*  1 Tsp garlic

*  2 Cups broccoli florets

*  1 Lb ground beef

*  Juice of a lime

*  Salt/Pepper to taste

Spray a skillet with Pam, or coat with a small amount of oil. Sauté the mushrooms and garlic for 5 minutes. Add in the broccoli and cook another 6-7 minutes, until the veggies are crisp-tender. Spoon them onto a plate and set aside. Brown the ground beef until there is no pink, then drain thoroughly. (Don’t skip this step, or the dish will be greasy.) Add the beef and veggies back to the skillet with the lime juice and salt/pepper. Stir to combine. Within 15 minutes, you will be finished!

Beef & Veggie skillet pairs beautifully with rice—I used free rice pilaf—or you could serve baked potatoes on the side. To round out the meal, bread and a green salad works well.
